Some people call it a pumpkin. Others call it a squash. Either way, the Hokkaido squash or Red Kuri squash is a winner. Its size is similar to that of a very large gem squash, but the colour of its skin makes it look more like a mini pumpkin, and it's considered to be one of the most nutritious squash varieties out there. Its nutty flavour makes this unusual heirloom a delicious addition to any meal, whether baked in pies, oven roasted, or used as the basis for a soup.
