You can eat the leaves fresh, and you can allow them to form a nice head with pretty, red-flecked leaves. You can eat this as is, but if you want to cut out the slightly bitter flavour of the chicory, you can blanch it by transplanting and excluding light for a few weeks. However, cooking also reduces the bitterness, so see what suits you best.
